Jean-Christophe Novelli, who backs the 'IoS' Sunday Lunch Campaign, yesterday recommended this simple recipe for lemon roasted chicken with shallot and baby potato mash - he says children and their parents can prepare it together for Sunday lunch. Ingredients (serves 4): 1 chicken' 1 lemon, softened and pricked' 1 bulb garlic' 1 onion, halved' 1 bay leaf' salt and black pepper' 2 tbsp olive oil' 12 baby new potatoes' 12 shalots, in half' sprig of thyme' 1 bay leaf.

To serve with steamed green beans. Pre-heat oven to 220C. Season inside of chicken with salt and pepper. Stuff with lemon, garlic, bay leaf and onion. Tie legs and place on baking tray. Season outside of bird and brush with oil. Roast for about 1 hour. Remove from oven and invert, so breasts are underneath. Leave for 15 minutes. Reserve some ju ices for mash. Add splash of water to juices in roasting tin and simmer for a few minutes. Fortheshalotand mash -Boil potatoes for 15 to 20 minutes. Mash lightly. Place shalots in baking tray with garlic, olive oil, thyme and bay leaf and season well. Place with chicken for the last 15 minutes of cooking time. Remove from oven and takeoff the skins. Mash down. Combine shalots with potatoes and mix with a little of the chicken juices.
