Fergus Henderson (below) of St John has decided to sell the secret behind his offal-ly (sorry) friendly creations. St John's "Trotter Gear" - not to be confused with the possibly soon-to-be launched leisure wear line by the Chicago chef of the same name - is a wonderfully unctuous stock made from the piggy bits that everday chefs leave behind; now available to the public.
Pierre Koffmann has been on an extended sabbatical since hanging up his apron at the legendary La Tante Claire back in 2002.
Now fans of Koffmann's cooking can catch him in action, for a limited time only, behind the stove at The Bleeding Heart in London EC1, the old-school French restaurant that post-Tante Claire he's periodically been rumoured to be buying.
Gordon Ramsay's people deny that he has bid for the 1970s- styled, Sloane magnet of a wine bar that is Foxtrot Oscar, just up the road from his Chelsea restaurant. Which, if true, is a shame for headline writers as "Ramsay to Foxtrot Oscar" has a nice ring to it.
