Start With Pancake Mix

Combine four staple ingredients to make batter for pancakes and frying.

Save money and add extra goodness to breakfast by making your own pancake mix. This recipe goes together in a snap. Once you try it, you'll be reminded that homemade doesn't have to be hard. -DONNA FLORIO

Pancake Mix

MAKES 6 CUPS

PREP: 10 MIN.

6 cups all-purpose flour

3 Tbsp. baking powder

2 tsp. baking soda

2 tsp. salt

1. Stir together all ingredients in a large bowl; store in a zip-top plastic bag up to 6 weeks.

Basic Pancakes

MAKES 4 SERVINGS (ABOUT 15 PANCAKES)

PREP: 10 MIN., COOK: 8 MIN.

1½ cups Pancake Mix

1 Tbsp. sugar

1½ cups buttermilk

1 large egg, lightly beaten

1 Tbsp. vegetable oil

1. Combine Pancake Mix and sugar in a medium bowl.

2. Whisk together 1½ cups buttermilk, egg, and oil; add to dry ingredients, whisking just until lumps disappear.

3. Pour about ¼ cup batter for each pancake onto a hot, lightly greased griddle or large nonstick skillet. Cook pancakes 2 minutes or until tops are covered with bubbles and edges begin to look cooked; turn and cook 2 more minutes or until done. SUZAN L. WIENER

Banana-Pecan Pancakes: Stir 1 chopped banana and ¼ cup toasted chopped pecans into batter; proceed as directed.
