Try These Fruit Salads

Brighten a cool-weather menu with our tempting recipes.

Food gifts are always welcome. Apples, pears, oranges, grapefruit, and other fruit are at their peak during cooler months. So add a fruit basket to your gift list-it looks lovely, is great to eat, and is good for you too. And don't forget to include a recipe for one of our tasty salads.

Cinnamon Apple Salad

MAKES 4 SERVINGS

PREP: 15 MIN., COOL: 10 MIN.

1 Golden Delicious apple, quartered and cored

2 tsp. water

2 tsp. ground cinnamon, divided

¼ cup raspberry vinegar

1 tsp. sugar

1 tsp. Dijon mustard

¼ tsp. salt

½ cup canola oil

1 (8-to 10-oz.) package gourmet mixed salad greens, thoroughly washed

½ (4-oz.) package crumbled goat cheese

3 Tbsp. walnuts, coarsely chopped

1. Cut apple quarters into ¼-inch slices. Microwave slices, 2 tsp. water, and 1 tsp. cinnamon in a microwavesafe bowl at HIGH 1 minute, stirring once. Cool 10 minutes.

2. Whisk together vinegar, sugar, mustard, salt, and remaining 1 tsp. cinnamon until well combined. Add canola oil in a slow, steady stream, whisking constantly.

3. Toss ½ cup vinaigrette with salad greens. Sprinkle salad evenly with goat cheese, walnuts, and apple mixture. Serve remaining vinaigrette with salad, if desired, or refrigerate up to 1 week. ANN FOSNIGHT

Jalapeño, Orange, and Cucumber Salad

MAKES 4 CUPS

PREP: 20 MIN., CHILL: 1 HR.

2 cucumbers, peeled

4 to 5 large oranges, peeled and sectioned (about 4 cups)

½ cup thinly sliced red onion

2 Tbsp. fresh lime juice

2 tsp. paprika

½ tsp. salt

1 Jalapeño pepper, seeded and minced

1 small head iceberg lettuce, chopped into 1-inch pieces

Garnish: cilantro sprigs

1. Cut cucumbers in half lengthwise; remove seeds, and cut into thin slices.

2. Combine cucumbers, oranges, and next 5 ingredients; toss gently. Cover and chill at least 1 hour or until ready to serve.

3. Pour orange mixture over lettuce in a large bowl; toss gently. Garnish, if desired. KELLI CONTRERAS
