Surprise your guests with splurge-worthy Perfect Prime Rib; it makes just the right centerpiece to an extraordinary party. Top each slice with a dollop of Fluffy Horseradish Sauce, and round out your meal with tossed salad and steamed broccoli with diced red peppers.
Perfect Prime Rib
MAKES 6 SERVINGS
PREP: 5 MIN.; COOK: 1 HR., 30 MIN.; STAND: 20 MIN.
1 ½ tsp. kosher salt
1 tsp. coarsely ground pepper
1 Tbsp. extra virgin olive oil
(6-lb.) prime rib roast (about 3 ribs)
Fluffy Horseradish Sauce
Garnish: rosemary sprigs
1. Combine salt, pepper, and olive oil; rub evenly over roast. Place roast on a wire rack in an aluminum foil-lined roasting pan.
2. Bake at 450° for 45 minutes; reduce oven temperature to 350°, and bake 45 minutes or until a meat thermometer inserted in thickest portion registers 145° (medium-rare) or to desired degree of doneness. Remove from oven, cover loosely with aluminum foil, and let stand 20 minutes before slicing. Serve with Fluffy Horseradish Sauce. Garnish, if desired. HOWARD GREEN

Fluffy Horseradish Sauce:
MAKES ABOUT 2 CUPS
PREP: 10 MIN.
This robust sauce is inspired by a recipe served with moist and tender beef at Lawry's The Prime Rib restaurants. With just four ingredients, it is easy to whip up while the roast is standing.
1 cup whipping cream
4 Tbsp. prepared horseradish
1 to 2 Tbsp. chopped fresh parsley
¼ tsp. garlic salt
1. Beat 1 cup whipping cream at medium-high speed with a heavy-duty stand mixer 1 minute or until stiff peaks form.
2. Fold in remaining ingredients. Serve immediately, or cover and refrigerate up to 8 hours.
