Crispy Chops From the Oven

My family and I love fried pork chops. As delicious as they are, my waistline can't handle the fried part anymore. We found a couple of oven-fried versions that have become our new favorite comfort food. Sure, you can purchase oven-fry coating in a box. But with these recipes, you'll have more control over the sodium content without the added preservatives, and the coating will be fresher, which helps with the crispiness. -VICKI A. POELLNITZ

Cornflake-Coated Pork Chops

MAKES 6 SERVINGS

PREP: 10 MIN., BAKE: 35 MIN.

2 large eggs, lightly beaten

2 Tbsp. milk

5 cups cornflake cereal, crushed (about 2 cups crushed)

6 boneless pork chops (about ¾-inch thick)

2 tsp. lemon pepper

1 tsp. salt

1 tsp. garlic powder

1 large lemon, halved

Garnish: halved lemon slices

1. Stir together eggs and milk in a shallow dish. Place cornflake crumbs in a separate shallow dish. Sprinkle pork evenly with lemon pepper, salt, and garlic powder. Dip pork chops in egg mixture, and dredge in cornflake crumbs. Place chops on a lightly greased rack on a baking sheet.

2. Bake at 350° for 30 to 35 minutes or until done. Squeeze lemon juice evenly over chops, and garnish, if desired.

Oven-Fried Pork Chops

MAKES 4 SERVINGS

PREP: 10 MIN., BAKE: 10 MIN.

4 (½-inch-thick) pork chops (about 1 ½ lb.)

1 tsp. salt

½ tsp. black pepper

1/8 tsp. ground red pepper

1 sleeve saltine crackers, crushed (about 1 cup crushed)

1 large egg, lightly beaten

Vegetable cooking spray

1. Sprinkle pork chops evenly with salt, black pepper, and red pepper. Place cracker crumbs in a shallow dish.

2. Dip chops in egg, and dredge in cracker crumbs. Place on a lightly greased rack on a baking sheet. Spray chops evenly with cooking spray.

3. Bake at 425° for 8 to 10 minutes or until done. SHERRI MITCHELL
