Stocking Up on Flavor

A rich, full-bodied broth can add tremendous flavor to an otherwise ordinary recipe. If you don't have time to linger around the stove all day, start with 2 quarts of canned chicken broth. Add 1 cup each of coarsely chopped celery, carrots, and onion; ½ cup chopped fresh parsley; 2 large garlic cloves, pressed; and the left-over bones and scraps from a roasted turkey or chicken. Bring the ingredients to a boil; reduce heat, and simmer broth 45 minutes, skimming the surface to remove excess fat and foam. Strain, and chill up to two days or freeze up to one month.
