Savor sweet corn

Southern Living,  Jul 2002  by Hurst, Andria Scott,  Noelke, Tom,  McIntyre, Laurie

FOOD

AND HOSPITALITY

Sunny yellow kernels burst with flavor.

Summer's gift of sweet corn excites all the senses. The moist green shucks fill your hands with cool, rough texture, while the aroma of kernels just cut from the cob offers a fragrant scent of the season.

Buy corn from a farmers market when you can. Get it right off the truck, early in the morning; that way, you'll know it's fresh. Once you get the precious produce home, handle it carefully. If you have just a few ears, keep them in their husks in the refrigerator until you're ready to cook them. To store, dip unshucked ears in cold water, seal them in an airtight zip-top plastic bag, and refrigerate up to five days.

Don't miss this prime time to enjoy corn. It's at an all-you-can-eat price right now, so make sure you put up some for later.
