Garlic in a jar makes it fast

Regular or roasted, this convenience product is a flavorful way to chop up your prep time.

Let's say your recipe calls for six cloves of minced garlic. Even with all the different gadgets that are available to accomplish the task, peeling and chopping fresh garlic has to be one of the least appealing aspects of preparation. Jarred minced garlic, often sold in the produce section, can make quick work of this. Generally, 1/2 teaspoon of prepared garlic equals 1 medium whole clove, but we find that 1 1/2 teaspoons really suits our taste.

If you love the rich taste of roasted garlic but don't have time to prepare your own, you can buy it in ajar as well. Whichever variety you choose, buy it in small quantities, and keep it refrigerated once opened to prevent it from turning rancid. CYBIL A. BROWN
