O'Shields exits Bellagio F&B VP post, starts firm

LAS VEGAS -- W. Bryan O'Shields, who won the International Foodservice Manufacturers Association's prestigious Gold Plate award last May for his work as vice president of food and beverage at the Bellagio Hotel and Casino here, has resigned that post to launch a consulting business.

Win Person, a seven-year veteran of the Four Seasons chain who was director of food and beverage at its Dallas hotel, assumed that title at the Bellagio this summer, owner MGM Mirage confirmed. He now heads an operation that last year had $200 million in sales, served some 20,000 meals a day and employed 3,300 -- the world's largest hotel food and beverage staff.

"After five years at the helm, I wanted a new challenge," remarked O'Shields, who said he had signed three clients since launching Las Vegas-based W. Bryan O'Shields Hospitality Consulting LLC last month.
