Baja Fresh taps CKE vet Hopkins as franchise VP

THOUSAND OAKS, CALIF. -- Baja Fresh Mexican Grill, the 300-unit fast-casual chain based here, has named CKE Restaurants veteran Craig Hopkins vice president of franchise development and real estate.

Hopkins will be responsible for attracting franchise operators for expansion of Baja Fresh and its sister chain, 101-branch La Salsa Fresh Mexican Grill.

La Salsa recently was acquired by Baja Fresh's owners from Carpinteria, Calif.-based CKE Restaurants Inc., parent of the Hardee's and Carl's Jr. brands.
