Keep food fresh at the beach: wrap your sandwich right and spare yourself a stomachache - Diet and Nutrition - preventing food poisoning - Brief Article

THE SUMMER SUN CAN TURN YOUR picnic lunch into a breeding ground for bacteria, putting you at risk for food poisoning, says Robert Anderson, Ph.D., professor emeritus of food microbiology at West Virginia University in Bridgeport. To keep your food from spoiling, follow these tips. Choose the Coolest Storage. Buy a cooler with walls at least 2 inches thick; the inside will stay cool longer than in thin-walled Styrofoam coolers.

Wrap It Right. Double-wrap sandwiches and fruit individually in plastic wrap or Ziplock bags. Doubly sealing these items separately keeps food fresher by sealing in moisture better. And plastic wrap keeps food cooler than aluminum foil, says Anderson.

Shade It. Store your cooler under an umbrella or in the shadow of your beach chair to prevent the sun from beating directly down on it.

Watch the Time. Different foods will keep for different lengths of time, but a good rule of thumb is to eat your meal within four hours of packing it.
