Toss it in: salads just aren't what they used to be—and we couldn't be happier about it

Each year it seems some new kind of green edges its way into the bowl, lifting a salad's flavor quotient and, often, its nutritional value. The latest lettuce to find entree is mache, a sweetish, nutty-tasting leaf with a velvety texture. Also known as lamb's lettuce, mache is high in vitamins A and C as well as iron (it provides a smattering of calcium, too).

Besides brightening salads, it makes a nice addition to pastas and soups--anywhere spinach goes, mache can go, too. Look for it at farmers markets and pre-bagged in grocery stores. Log on to www.epicroots.com for more info.
