Antonia Demas' Food is Elementary curriculum is an innovative nutrition program which integrates food, culture and the arts.

If you don't have the opportunity to hear Antonia Demas speak in person, by all means get the video detailing her nutrition education program with male juvenile delinquents in Miami. The kids in the program experienced dramatic improvements in grades, behavior, athletic performance, and weight. They also achieved lab-certified reductions in triglycerides, and cholesterol.

Importantly, this program uses USDA commodity foods that don't cost more than the more familiarly available chicken nuggets and frozen beef patties.

Get your Portable Kitchen ready (guidelines are included). This program will take more time than simply passing out food pyramid pictures, but a taste of classroom-made African Stew or Three-Sisters Casserole could result in dietary improvements to last a lifetime.
