More on vegetarian foods in assisted living facilities
Vegetarian Journal, July-August, 2004
In response to the Note from the Coordinators in Issue 3, 2003:
I thought you might be interested in an experience I had while touring a retirement community in our area. The lady we were supposed to meet for the tour was a little late, so we looked around the main building on our own. I noticed that the list of entrees for the week was posted and not a single vegetarian option! I mentioned this to the guide and she said they hadn't even thought of the possibility of vegetarian retirees!
I hope I prevailed upon her the fact that many vegetarians are retirees, and many more will be joining the ranks of the newly retired with the aging of the baby boomers. I think the message is one that needs to be promoted to the many retirement building projects that are cropping up everywhere. We are vegetarian, and we are here!
While vegetarians can surely survive on side dishes, why should we when just a little imagination produces such marvelous entrees?
Thank you for your great magazine; I always enjoy reading it from cover to cover whenever it appears in my mailbox.
