Three potato more

"One Potato, Two Potato" (5 Ingredients, March, p. 44) was a wonderful article that brought back some old memories. I grew up on a potato farm--it was my dad's dream in his later life. When he was farming, russets were his favorites, and he grew the most beautiful russet Burbanks I have ever seen or tasted.

As you can imagine, I've prepared plenty of potato recipes with 20 or more ingredients, but one doesn't always have time for that. These recipes look great with just five ingredients. My dad passed on many years ago, but I could feel him reading these recipes over my shoulder and getting so happy. If he were here today he would be in the kitchen with me trying out one of them right now. Kathryn Colony Hudson Wis.
