I thought your article on "Super Foods" in the February issue was great. I hope people will take these suggestions to heart. Also, I would like to see part two of "Super Foods" and have it include hemp seeds, chia seeds, flaxseeds, cocoa nibs, spirulina and algae.

As I grocery shopped today and lamented the high cost of meat--and its questionable safety--I picked up my first copy of Vegetarian Times. I am very interested and excited about "Conquering Tough Foods" (January). I have dabbled in vegetarianism and have wanted go full throttle for years. What prevents me? Tofu, tempeh, seitan and picky eaters in the house. I'm looking forward to trying some of the tempeh and seitan recipes and slowly, but surely, moving toward a vegetarian lifestyle for me and my family.

I bought a subscription to VT because of the article "Conquering Tough Foods." I was so excited because I had no idea what to do with seitan and tempeh. The best part of the article was the information on what supermarket aisle to shop in for egg replacer, seitan and tempeh. Part of the reason I never bothered with these items before was that I never wanted to take the time to search the store.
