I'm dying to spend some time at the Culinary Vegetable Institute (CVI) (www.culinaryvegetableinstitute.com, 419.499.7500), a rustic retreat in Milan, Ohio. The CVI is located near the Chef's Garden, a one-of-a-kind, 100-acre farm in Huron, Ohio, that grows miniature and heirloom vegetables, specialty lettuces and edible flowers for renowned chefs including Charlie Trotter and Roxanne Klein.

The CVI was built to educate food professionals, rising chefs and children of all ages about the culinary contributions of vegetables. Also a retreat center for corporations, the CVI provides hands-on seminars that explore vegetables, herbs and culinary trends.
