Congee - Rice porridge. Serves as a background for peanuts, seeds and eggs. Popular in China as a breakfast food.

Cruciferous - Vegetables belonging to the leafy greens family. Includes broccoli, cabbage, cauliflower, brussels sprouts, kale, spinach, chard and mustard greens, and are excellent sources of calcium and vitamins A, C and E.

Fromage Blanc - A soft, fresh, white, French cheese with the consistency of sour cream. Low-fat plain yogurt or sour cream can be substituted. Available at most natural-food markets

Hyperparathyroidism - A condition caused by overactive parathyroid glands resulting in increased levels of calcium in the bloodstream. Can lead to osteoporosis or kidney stones.

Steel-cut oats - Also known as Scotch oats or Irish oatmeal--all names for oats that have been cut into two or three pieces, not rolled. They take longer to cook than rolled oats and have a chewy texture.

Wehani Rice - A light-colored brown rice that has a fragrance reminiscent of popcorn and is related to Basmati rice.
