The award-winning Greek Taco

The National Association of College and University Food Services (NACUFS) sponsored a vegan recipe contest at the Cal Poly Pomona Foundation, and Chef Arnulfo (Arnold) Zavalza took first prize with the Greek Taco. Criteria for the contest were taste, appearance, creativity, and nutritional content.

The recipe had to serve a minimum of 25 customers and had to have a protein source. Says Chef Zavalza, "I came up with the idea of a Greek Taco after I arrived at Cal Poly Pomona and discovered that there was a large inventory of pita bread left over from a summer conference group." Congratulations to Chef Zavalza for his enthusiasm about vegan fusion cuisine and for his creative and wonderful new dish.
