Despite the attention given to mad cow disease, contaminated produce was responsible for the greatest number of food-borne illnesses from 1990 to 2003, a study by the Center for Science in the Public Interest (CSPI) has found. "Dirty irrigation water and the use of untreated manure can spread animal pathogens to fruits and vegetables," says Caroline Smith DeWaal, CSPI's food safety director.

The Produce Marketing Association (PMA) recommends washing fruits and vegetables in running water. "No soap or bleach because produce absorbs what you put on it," says PMA's Kelley Bielewicz. Another option? Fruit and vegetable washes, formulated with solvents to cut through shiny wax coatings.
