Easter nosh - trends - mache from Epic Roots and potatoes from Wood Prairie Farm - Brief Article
Vegetarian Times, April, 2003 by Akasha Richmond
This year, try filling your Easter baskets with mache, the gourmet nosh that rhymes with posh. Mache, once a wild field green that's sometimes referred to as an herb, has been widely cultivated in the Atlantic coastal regions of France since the 17th century. Today, Epic Roots, a specialty produce grower, cultivates the greens, which are delicious served as a simple salad with olive oil vinaigrette and roasted beets or sauteed wild mushrooms (www.epicroots.com).
It would also be great with potato salad made from colorful Easter Egg Potatoes from Wood Prairie Farm in Bridgewater, Maine. Their gift box is filled with a tri-colored collection of egg-shaped potatoes (www.woodprairie.com, 800.829.9765).
